2. ADD the cream, yogurt and lemon juice; Mix and let stand for 10 minutes.
3. RETURN the mixture to medium heat, with this we force the milk to separate. Add salt to taste, stir and extinguish the fire.
4. PLACE a fine strainer over a large pot or bowl and on top of it a fine gauze cloth or sky blanket. Pour the milk and let drain.
5. TAKE the ends of the fabric, join them and turn to press and remove as much liquid as possible. You can tie a knot or tie the cloth with kitchen thread and let it continue to drain. If it is very hot let it drain in the refrigerator.
6. REMOVE the mixture from the fabric and place it in a mold or tupper to shape it. Place weight on top so that it compacts better, let it rest for a couple of hours.
